Fields are read out of the document into a table, and a person only approves. Every answer from the assistant shows the document it rests on. How many documents needed a manual correction is counted.
An illustrative first build: invoices arriving at a production workshop are read from a single inbox. Supplier, date, line item and amount are extracted into the accounting sheet. A document below the confidence threshold goes to a person and is corrected on an approval screen. Every correction is logged, so which field fails most often is visible.
